One of my favorite desserts is carrot cake, so is it any wonder that I decided to try my hand at baking Cake Mix Carrot Cake Cookies? This will become one of your favorite cookie recipes. I am also a fan of easy, so I used one of my favorite supermarket shortcuts to make these cookies - cake mix! That's right, you can use cake mix to make delicious, soft and yummy cookies. It is the easiest way to bake cookies. So let's bake up some Cake Mix Carrot Cake Cookies.

Ingredients
- Carrot cake mix
- Canola oil or vegetable oil
- Eggs
- Vanilla
How to make cookies with cake mix
Line abaking sheetwithparchment paper. Preheat the oven to 350 degrees. Pour the carrot cake mix into a large bowl.
Add in ⅓ cup of oil.
Add 2 eggs and 1 teaspoon of vanilla to the bowl.
Mix until all the ingredients have been thoroughly combined.
Use a tablespoon to scoop out the cookie dough and place the cookie dough on the cookie sheet a few inches apart.
Bake for 8-9 minutes. You'll want to remove these before they completely firm up. This way they will stay soft later.
After you remove the cookies from the oven, let them cool for a few minutes and then move them to a baking rackto cool.
These carrot cake cookies make a great Easter treat, but I enjoy them any time of year,
I have also made these carrot cake cookies from cake mix with some chopped walnuts and they have added a nice crunch.
I love how these cake mix carrot cake cookies stay soft. You can store them in a airtight container for 3-5 days and they will remain soft.
These cookies make a great afternoon snack with a cup of coffee or tea. Yum!
These cookies taste great on their own, but you can also add some cream cheese frosting to them to get a real carrot cake flavor. I also added some green and orange sprinkles because I was feeling extra festive. Enjoy this yummy dessert made with carrot cake mix!

Frequently asked questions
Do cake mix cookies stay soft?
Yes as long as they are not overbaked. You don't want to bake these cookies for longer than 10 minutes. I take mine out at 9 minutes.
Can I freeze these cookies?
Yes. I place mine in a zip top bag separated by sheets of wax paper. They can be kept frozen for 2-3 months. To thaw, simply remove them from the freezer and let them sit out for 1-2 hours.
I don't have vegetable oil. What kind of oil can I use?
If you don't have vegetable oil, any light colored oil will work. I have used canola oil in the past and it has worked well.
